Sushi is a mysterious food, and for Japanese people, "sushi" is cheap and expensive.

When do you start sushi?

Sushi first appeared in the 1829 literature. There are several stores that are said to have originated, and it is unclear where the origin of sushi is today.

What is commonly referred to as "sushi" today is "Edomae sushi".

This is what we call Tokyo today, and it is sushi that was born in what was then Edo.

The style of "painting rice with vinegar and putting raw fish on it" was born and continues to this day.

The difference from those days is that sushi is now small and can be eaten in one bite, but when sushi was born, the size of one sushi was quite large and could not be eaten in one bite. Also, at that time, sushi was not high-class, and like hamburgers and kebabs, it was treated the same as the current fast food that is easy and cheap to eat.



Why did it spread from Edo (Tokyo)?

The prototype of sushi today is said to be Edo (Tokyo), but why did that style spread throughout Japan and become the standard?

It was a big earthquake in Tokyo in 1923. It is said that many of the sushi chefs who were in Edo at that time left Tokyo and opened stores in various regions, from which the current "sushi" (Edomae sushi) spread. Therefore, although it is named "sushi", there are many dishes in various parts of Japan that are far from the "sushi" that you imagine. This is because the dish called "sushi" that was rooted in the region before "Edomae sushi" became widespread still remains.



Why did "sushi" turn into a small, high-class food?

The reason for this is the war. After World War II, food distribution was restricted in Japan, where food was scarce, and it extended to sushi restaurants. The simple explanation was that "sushi that uses a lot of rice and fish is a luxury item, so sales are prohibited." Japan, which was a defeated country after the war, was a government decision to distribute the minimum amount of food to the people because neither agriculture nor fishing was functioning. However, an organization trying to protect the food culture of sushi made a direct interview with the government. This is because he had a strong desire to "get rid of the Japanese food culture of sushi." As a result, the government allowed sushi restaurants to operate under the rule that "to make 10 sushi, weigh up to 350 grams of rice."

Also, at the time when food was scarce, "eating rice and raw fish by eating out" was a very luxurious act, so it is said that the price was higher than when sushi was first born.

Under these circumstances, "sushi is small in quantity, but expensive" continues to this day.

Current sushi

Nowadays, craftsmen are always present, and there are many shops that are particular about the quality of fish as "luxury sushi shops" that are very expensive. Such a restaurant is not a restaurant that you can easily go to, and it costs 150,000 yen ($ 150) to 30,000 yen ($ 300) for one meal, so it is difficult to eat frequently. However, there is no doubt that the taste is far better than that of chain stores, which are other large group companies. It is true that "the fish should be the same, but the taste is completely different from that of the rotating sushi."

On the other hand, many of the "Rotating Sushi" chains, which are widely deployed overseas, are inexpensive. The number of stores that can be easily used by ordinary people exceeds the number of luxury stores. Earlier, I used the expression "the taste is inferior to that of a luxury store", but never! It's not bad at all! Many companies are particular about the quality of fish. I often go to conveyor belt sushi restaurants to eat sushi, but there are almost no bad sushi or side menus. Besides, if you eat alone, the price is quite cheap, about 2000 yen ($ 20) to 3000 yen ($ 30)! To be honest, I would choose a high-class restaurant for special occasions, but if I usually go out for lunch or dinner, I would choose a conveyor belt sushi restaurant.
