「和食」I want you to know about Japanese food culture! 「日本食」

The theme I will introduce today is "和食(Wasyoku) and 日本食(Nihonsyoku)".

I think everyone has heard the word "和食(Wasyoku) ". There is another way to say "日本食(Nihonsyoku)" in Japanese food. I will explain the two.

What is 和食(Wasyoku)?

和食(Wasyoku) is a dish that is cooked in a traditional way using vegetables and fish grown in the nature of Japan. In addition, Japanese food has a basic style of serving, which is "一汁三菜(Ichiju Sansai)." As shown in the picture below, it consists of rice and pickles, soup, one main dish, and two side dishes. However, this is just the basics, and there is no detailed definition. Today, Japanese food is entertaining eaters in a variety of serving styles.

One of the characteristics of 和食(Wasyoku) is
・ Use a lot of water.
・ Mainly boil, bake, and steam.
・ Combine the soup stock produced in the process to adjust the taste.
・ When eating raw fish and vegetables, cook using special equipment.
and so on.
Typical dishes include "sushi," "soba," "tempura,"  and "miso soup."

和食(Wasyoku) is also deeply involved in seasonal events in Japan. I wrote an article about rice cakes before, b
ut there are many cultures in Japan that eat meaningful ingredients and dishes at each event, and in such cases, dishes that suit the situation are often offered.

Why is 和食(Wasyoku) healthy?
It seems that this is because the Japanese food culture was not very carnivorous and the cooking of "fried" was not done. Domestication of animals other than birds in Japan. In other words, because there weren't many "livestock and ranches", the meat was a wild animal, what we now call "jibie", but we couldn't get a stable number. Therefore, fish that can take a large number were generally eaten. The culture of carnivorous food became widespread in Japan around 1868. Around this time, Japan began trading with foreign countries, and Western cuisine spread to Japan. In this process, "beef", "livestock breeding method", and "import of meat animals that were not in Japan" spread at the same time, and the carnivorous culture in Japan took root.

Also, the "fried" dishes are similar to "tempura" in 和食(Wasyoku), and there are not many types of fried dishes. It can be said that the spread of fried food was also spread by foreign trade.

In other words, around 1868 was also an era when Japanese food culture was reformed, and many of the "和食(Wasyoku)" that existed before that were healthy.

In a culture that links food and health, I think 和食(Wasyoku) is one of the world's top-class, efficient and healthy food cultures.

What is the difference between "和食(Wasyoku) " and "日本食(Nihonsyoku)"?

By the way, until now, the explanation was about "和食(Wasyoku)", but from now on, I will explain about "日本食(Nihonsyoku)". "日本食(Nihonsyoku)" refers to food that was born in Japan and that has been arranged and established in Japan, including 和食(Wasyoku). In addition, "和食(Wasyoku)" is a dish that existed in Japan before around 1868. "日本食(Nihonsyoku)" is a dish that was born in Japan after that, or is an arrangement of foreign dishes in Japan. There is also an interpretation.

Typical examples of Japanese food include "ramen," "omelet rice," "curry rice," and "sukiyaki."

In other words, "和食(Wasyoku)" does not include ramen and sukiyaki, but it will be included when the expression "日本食(Nihonsyoku)" is used. Many dishes include the expression Japanese food, and the interpretation is wide.

My thoughts on Japanese food culture.

From here, let me write my thoughts. I love Japanese food. I even think it's one of the pride of this country. There is respect for the ingredients, so the cooking method is changed for each ingredient so that there is no waste, and the place to throw away is minimized. I cook so that people who eat it will think it's delicious, and people who eat it will be healthy. I would like people all over the world to visit Japan and experience Japanese food culture.
